Cole Slaw



1 small head green cabbage, sliced Julianne
1 red onion, sliced thin
2 granny smith apples, sliced into matchsticks (skin on)
3 stalks celery, sliced thin
½ cup mayonnaise (125ml)
Juice of 2 lemons
1 tablespoon sugar (15ml)
1 bunch chives, chopped fine
salt and pepper to taste
½ cup dried apricots, sliced thinly

Chop first 4 ingredients into a bowl.
  
Dressing: combine mayo, lemon juice, sugar, chives and season with salt & pepper. Pour into bowl and mix together. Add dried apricots. Mix & chill for at least 1 hour up to 4 hours before serving.

Serves 6-8
